•1 tablespoon butter or margarine
•1/4 cup chopped green onion
•6 eggs, slightly beaten
•1 can (4 oz.) chopped mild chilies, drained
•6 flour tortillas (7-inch diameter)
•3/4 cup (3 oz.) shredded Mexican cheese blend
•3/4 cup thick and chunky salsa, mild or medium
•2 packages (2oz each) Buddig Sliced Beef, chopped
                Melt butter in medium skillet. Sauté green onion 1 to 2 minutes or until tender. Combine eggs, chopped beef and chilies. Pour into skillet and cook until eggs are firm, stirring occasionally. Divide egg mixture evenly and place down center of tortillas. Sprinkle with cheese. Fold sides of tortilla toward center. Serve with salsa spooned over top.
