What a great day Saturday in Afton, MN. It was Jessie Diggins Day celebrating her gold medal in cross country skiing at the Olympics. Selma's Ice Cream Parlor in Afton had a contest to pick a flavor and name the ice cream in honor of Jessie. The flavor is a red, white and blue swirl. There were hundreds of suggestion for the name and the winner is......"Here Comes Diggins!" Taken from the now famous announcer's call at the end of the historic gold medal race. Make sure you head to Selma's to try it.
